Recipe for Spaghetti Carbonara!
Ingredients for Carbonara
- 1 pound spaghetti
- 4 ounces pancetta or bacon, diced
- 4 garlic cloves, minced
- 4 egg yolks
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
STEPS
- Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente, then drain and reserve about 1 cup of the pasta water.
- In a large skillet, cook the pancetta or bacon over medium heat until crispy. Add the garlic and cook for another minute or until fragrant.
- In a medium bowl, whisk together the egg yolks, Parmesan cheese, and heavy cream until well combined.
- Add the drained spaghetti to the skillet with the pancetta and garlic, and toss to combine. Remove the skillet from the heat.
- Slowly pour the egg mixture over the spaghetti while stirring constantly to prevent the eggs from scrambling. If the sauce seems too thick, add a little pasta water to thin it out.
- Season with salt and pepper to taste. Garnish with chopped parsley if desired. Serve immediately.
