Recipe for Spaghetti Carbonara!

Ingredients for Carbonara

  1. 1 pound spaghetti
  2. 4 ounces pancetta or bacon, diced
  3. 4 garlic cloves, minced
  4. 4 egg yolks
  5. 1 cup grated Parmesan cheese
  6. 1/2 cup heavy cream
  7. Salt and pepper to taste
  8. Chopped parsley for garnish (optional)

  • Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente, then drain and reserve about 1 cup of the pasta water.
  • In a large skillet, cook the pancetta or bacon over medium heat until crispy. Add the garlic and cook for another minute or until fragrant.
  • In a medium bowl, whisk together the egg yolks, Parmesan cheese, and heavy cream until well combined.
  • Add the drained spaghetti to the skillet with the pancetta and garlic, and toss to combine. Remove the skillet from the heat.
  • Slowly pour the egg mixture over the spaghetti while stirring constantly to prevent the eggs from scrambling. If the sauce seems too thick, add a little pasta water to thin it out.
  • Season with salt and pepper to taste. Garnish with chopped parsley if desired. Serve immediately.
